I would not change the processor and leave the creepy fusion drive, but save the data, split the fusion drive, replace the SSD blade with a decent NVMe SSD (e.g. 512GB) to hold the OS and programs. You may keep the HDD for your mass data or replace it with a SSD too. The NVMe blade is however ways faster...
The method you use to remove the screen is very dangerous but the guide is helpful.
